Modern Dough Proofers are equipped with shelves and provide control over temperature and humidity, ensuring optimal fermentation conditions. A similar commercial device is known as a “Dough Conditioner.”
Uses of the Dough Proofer
Commercially, Dough Proofers are essential for maintaining ideal fermentation environments during the proofing stage in bread making. The primary and secondary fermentations, traditionally called “floor time” and “Hoiro” respectively, are facilitated by these devices. While “Hoiro” is less common in home baking, various fermentation devices are also used by home bakers.
Principle of Operation
Dough Proofers use electrical power to heat and maintain a specific temperature and humidity level, typically above room temperature.
